What are those little screws on the bridge of an electric guitar for?

I am currently in the process of changing my guitar strings for the first time, and I always noticed the small screws on the bridge. However, even changing my guitar strings, I accidentally touched one of the screws and noticed that it moves the position that slightly. The purpose they serve and what is the correct setting? (Also, what is the tone and how do I know if my guitar needs help with his intonation.) The screws move up and down the bridge, so you could have the screw for each string at different levels? So I have a lot of action on the E, A, D and ropes, but the action in the low G, B, and the strings and? That is what is recommended, or should all be in the same action? Finally, what effect does the action the strings have the sound? Or is it just a preference?
