How does the part that I'm playing in affecting the scales I can use?

Let's say I'm playing guitar and want to play in the key of C (no sharps or flats). Does that mean I can use any scale in the key of C (C, Dm, Em, F, G7, Am, B)? If not, can someone explain a bit about scales I can use when playing in the key of C?

When an instrument is in the key of C (flute, piano, low brass, mallets, guitar and oboe), which means you read the music in the key off and it is released to where your note setting should be Bb. You can play a table that you want very basically. The lowest key you should be able to play the F scale and higher you should be able to play F is an octave higher, then the first F.
