Q guitar plastic, bone or Ebony bridge pins really make a noticeable difference?
If so how, and maybe string combos, I use Elixers and Eboney
It is a matter of weight. Compare brass and plastic (heavier and lighter) - The bronze increases the weight of the bridge so you get a little more support, but you need more energy (force string) to get the sound going. Plastic is the opposite - does not add much weight to the bridge for a light strumming on the strings is at the top move. There would be little or no difference in the sound than you mention. The other issue is the durability - the bone is the most difficult it will last longer - Ebony will wear out faster.
